- 1 large red bell pepper – cut into 1-inch pieces
- 1 large orange bell pepper – cut into 1-inch pieces
- 1 red onion – peeled and cut into 1-inch pieces
- 1 medium zucchini – cut into 1-inch pieces
- 1 tablespoon avocado oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon kosher salt
- Pinch of black pepper
- 1 package chicken sausage (12 oz) – robust Italian flavor
Instructions
- Chop the veggies: Start by chopping the veggies and adding them to a large bowl.
- Add oil: Drizzle them with avocado oil and toss to coat.
- Mix the spices: In a smaller bowl, mix garlic powder, onion powder, Italian seasoning, kosher salt, and black pepper.
- Season the veggies: Add the spice blend to the veggies and toss until coated.
- Slice the sausage: Slice the chicken sausage into 3/4 inch rounds and add to the bowl with the veggies. Mix gently.
- Preheat the air fryer: Preheat your air fryer to 390°F and spray the basket lightly.
- Air fry: Place veggies and sausage in the air fryer basket and cook for 10 minutes, flipping halfway through.
- Serve: Remove and serve warm, optionally alongside cauliflower rice or brown rice.
