Description

Ingredients

  • 23 medium sweet potatoes (about 3.5 cups peeled and cubed)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Begin by washing and drying your sweet potatoes. Peel them and cut into 1/2 to 3/4 inch cubes.
  2. Place the sweet potatoes in a mixing bowl and drizzle with olive oil. In another bowl, mix paprika, garlic powder, salt, and pepper.
  3. Preheat your air fryer to 400°F.
  4. Add the cubed sweet potatoes to the air fryer basket in a single layer.
  5. Cook for 14–17 minutes, flipping halfway through.
  6. Let the potatoes rest in the air fryer for 3-5 minutes after cooking.
  7. Serve and enjoy your crispy sweet potato cubes!

Notes

For best results, ensure sweet potato cubes are uniform in size. Leftovers keep well in the fridge for up to 3 days.
