- 2–3 medium sweet potatoes (about 3.5 cups peeled and cubed)
- 2 tablespoons extra virgin olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
Instructions
- Begin by washing and drying your sweet potatoes. Peel them and cut into 1/2 to 3/4 inch cubes.
- Place the sweet potatoes in a mixing bowl and drizzle with olive oil. In another bowl, mix paprika, garlic powder, salt, and pepper.
- Preheat your air fryer to 400°F.
- Add the cubed sweet potatoes to the air fryer basket in a single layer.
- Cook for 14–17 minutes, flipping halfway through.
- Let the potatoes rest in the air fryer for 3-5 minutes after cooking.
- Serve and enjoy your crispy sweet potato cubes!
Notes
For best results, ensure sweet potato cubes are uniform in size. Leftovers keep well in the fridge for up to 3 days.
