- 100g guanciale or pancetta, diced
- 2 large eggs
- 50g pecorino cheese, grated
- 50g parmesan cheese, grated
- Salt, to taste
- Black pepper, to taste

Instructions
- Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente (about 8-10 minutes).
- In a large skillet, cook the guanciale or pancetta over medium heat until crispy.
- Whisk together the eggs, pecorino, parmesan, a pinch of salt, and black pepper in a bowl until well combined.
- Reserve some pasta water, then drain the spaghetti, letting it sit in the colander.
- Add the hot pasta to the skillet with the crispy guanciale and remove from heat.
- Pour the creamy egg and cheese mixture over the pasta and stir quickly until creamy. Use reserved pasta water if needed.
- Serve immediately, garnished with additional cheese, pepper, and parsley if desired.
