Description

A creamy, comforting pasta dish that brings the flavors of Italy to your kitchen, perfect for weeknight meals or gatherings.


Ingredients

  • 200g spaghetti
  • 100g guanciale or pancetta, diced
  • 2 large eggs
  • 50g pecorino cheese, grated
  • 50g parmesan cheese, grated
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley (for garnish, optional)

Instructions

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente (about 8-10 minutes).
  2. In a large skillet, cook the guanciale or pancetta over medium heat until crispy.
  3. Whisk together the eggs, pecorino, parmesan, a pinch of salt, and black pepper in a bowl until well combined.
  4. Reserve some pasta water, then drain the spaghetti, letting it sit in the colander.
  5. Add the hot pasta to the skillet with the crispy guanciale and remove from heat.
  6. Pour the creamy egg and cheese mixture over the pasta and stir quickly until creamy. Use reserved pasta water if needed.
  7. Serve immediately, garnished with additional cheese, pepper, and parsley if desired.

Notes

Serve your carbonara immediately for the best texture. The creaminess changes as it cools.
