Instructions
- Preheat your oven to 350°F (175°C). Grease a baking dish with olive oil.
- Sauté the spinach, bell peppers, and zucchini in a frying pan until tender, then season with salt and pepper.
- Whisk together the eggs and milk in a bowl until frothy.
- Layer the sautéed vegetables in the greased baking dish, pour the egg mixture on top, and sprinkle cheese over everything.
- Bake in the oven for about 20-25 minutes or until the eggs are set and the top is golden.
