Description

Ingredients

  • 4 large eggs
  • 1 cup of spinach, chopped
  • 1/2 cup of bell peppers, diced
  • 1/2 cup of zucchini, sliced
  • 1 cup of cheese (such as feta or mozzarella), crumbled or shredded
  • 1/4 cup of milk
  • Salt and pepper to taste
  • Olive oil for greasing
  • Fresh herbs (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking dish with olive oil.
  2. Sauté the spinach, bell peppers, and zucchini in a frying pan until tender, then season with salt and pepper.
  3. Whisk together the eggs and milk in a bowl until frothy.
  4. Layer the sautéed vegetables in the greased baking dish, pour the egg mixture on top, and sprinkle cheese over everything.
  5. Bake in the oven for about 20-25 minutes or until the eggs are set and the top is golden.
  6. Remove from the oven, let cool for a few minutes, and garnish with fresh herbs if desired before serving.
