  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • Optional: 1 cup chopped nuts or chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.
  2. Prepare the zucchini by grating it and squeezing out excess moisture.
  3. In a large bowl, whisk together sugar, vegetable oil, and eggs until smooth. Stir in vanilla extract.
  4. In a separate bowl, combine flour, baking soda, baking powder, cinnamon, and salt. Gradually add to the wet ingredients and stir just until combined.
  5. Fold in the grated zucchini and any optional mix-ins.
  6. Pour the batter into the baking pan, spreading it out evenly.
  7. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Slice into squares and serve!
