- 2 cups grated zucchini (about 1 medium zucchini)
- 1 cup granulated sugar
- 1 cup vegetable oil
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- Optional: 1 cup chopped nuts or chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.
- Prepare the zucchini by grating it and squeezing out excess moisture.
- In a large bowl, whisk together sugar, vegetable oil, and eggs until smooth. Stir in vanilla extract.
- In a separate bowl, combine flour, baking soda, baking powder, cinnamon, and salt. Gradually add to the wet ingredients and stir just until combined.
- Fold in the grated zucchini and any optional mix-ins.
- Pour the batter into the baking pan, spreading it out evenly.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Slice into squares and serve!
