Description

A cozy and creamy Butter Rice recipe perfect for chilly evenings, bringing warmth and nostalgia to your dinner table.


Ingredients

  • 1/3 cup butter
  • 1/2 medium yellow onion (finely diced)
  • 1 1/2 cups long grain white rice
  • 3 cups chicken stock (or vegetable broth)
  • Salt & pepper (to taste)
  • 23 bay leaves

Instructions

  1. Melt the butter in a large saucepan over medium heat until it’s bubbly and fragrant.
  2. Add in the finely diced onion and sauté gently for 5-6 minutes, allowing the onions to soften.
  3. Stir in the rice grains, coating them in the melted butter.
  4. Pour in the chicken stock (or vegetable broth), and season with salt and pepper. Toss in the bay leaves.
  5. Cover the saucepan and bring everything to a gentle boil. Then reduce the heat to low and cook for about 10-15 minutes.
  6. Turn off the heat but leave the pot on the hot burner for an additional 10 minutes to let the rice steam.
  7. Fluff the rice with a fork, remove the bay leaves, and serve warm.

Notes

Make ahead and reheat just before serving. Store leftovers in an airtight container in the fridge for up to three days.
