- 1/3 cup butter
- 1/2 medium yellow onion (finely diced)
- 1 1/2 cups long grain white rice
- 3 cups chicken stock (or vegetable broth)
- Salt & pepper (to taste)
- 2–3 bay leaves
Instructions
- Melt the butter in a large saucepan over medium heat until it’s bubbly and fragrant.
- Add in the finely diced onion and sauté gently for 5-6 minutes, allowing the onions to soften.
- Stir in the rice grains, coating them in the melted butter.
- Pour in the chicken stock (or vegetable broth), and season with salt and pepper. Toss in the bay leaves.
- Cover the saucepan and bring everything to a gentle boil. Then reduce the heat to low and cook for about 10-15 minutes.
- Turn off the heat but leave the pot on the hot burner for an additional 10 minutes to let the rice steam.
- Fluff the rice with a fork, remove the bay leaves, and serve warm.
Notes
Make ahead and reheat just before serving. Store leftovers in an airtight container in the fridge for up to three days.
