- 1 small head of cabbage, chopped
- 1 can diced tomatoes
- 1 cup shredded cheese (cheddar or Mexican blend)
- 2 tbsp taco seasoning
- Salt and pepper to taste
- Olive oil (for cooking)
Instructions
- Heat a tablespoon of olive oil in a large skillet over medium heat.
- Add the ground beef and cook until browned, breaking it apart with a spatula.
- Drain any excess fat.
- Stir in the taco seasoning and diced tomatoes (with juice) and cook for 2-3 minutes.
- Add the chopped cabbage, stirring to combine, and cover the skillet.
- Cook for another 5-7 minutes until the cabbage is tender.
- Remove from heat and top with shredded cheese.
- Cover until the cheese is melted and bubbling.
- Serve warm and enjoy.
