  • 2 tbsp (30g) Cajun seasoning blend
  • 1/2 cup (115g) unsalted butter (cubed)
  • 1/2 cup (120ml) chicken broth
  • 1/2 cup (120ml) heavy cream
  • 1 tbsp (15g) cornstarch (mixed with 1 tbsp (15ml) cold water)
  • 1 cup (200g) long grain white rice (uncooked)
  • 2 tbsp (10g) fresh green parsley (finely chopped)
  • 1 tsp (2g) coarse black pepper
  • 1/2 tsp (1g) red paprika flakes

Instructions

  1. Season the chicken: Begin by sprinkling the Cajun seasoning blend evenly over the boneless, skinless chicken breasts. Let them bask in those delightful flavors for a few minutes.
  2. Prepare your crockpot: Place the seasoned chicken breasts into the bottom of your slow cooker. This will be the foundation of our creamy comfort bowl.
  3. Add butter and broth: Scatter the cubed unsalted butter on top of the chicken, then pour the chicken broth over everything. The butter will melt throughout cooking, adding richness you’ll love!
  4. Slow cook: Cover the crockpot and set it on low for about 360-420 minutes or on high for 180-240 minutes. The chicken will become beautifully tender and infused with Cajun goodness.
  5. Creamy finish: Once cooked, carefully remove the chicken breasts and shred them using two forks. Stir in the heavy cream, followed by the cornstarch mixture, to thicken the sauce gradually.
  6. Cook the rice: In a medium-sized pot, prepare the uncooked long grain white rice according to the package instructions. Serve the creamy Cajun chicken over the perfectly cooked rice.
  7. Garnish and enjoy: Sprinkle the shredded chicken with chopped fresh parsley, coarse black pepper, and a sprinkle of red paprika flakes for that extra touch. Serve it warm and cozy, and enjoy every bite!
