Description

  • 4 cups beef broth
  • 1 cup green salsa (or tomatillos blended with cilantro)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onions and garlic, cooking until soft and fragrant, about 3-4 minutes.
  2. Add the beef and cook until browned on all sides, sealing in those succulent juices.
  3. Stir in the green salsa and pour in the beef broth. Bring this beautiful mixture to a boil; the aromas will start to dance around your kitchen.
  4. Reduce heat to a simmer, cover, and cook for about 90 minutes until the beef is tender—imagine it melting in your mouth!
  5. Add the diced potatoes and cook until they are soft and flavorful, about 20 minutes.

Notes
