Description

Delightful hash browns featuring grated sweet potatoes and caramelized apples, perfect for cozy mornings.

Ingredients

Scale
  • 2 medium Sweet Potatoes (peeled and grated)
  • 1 medium Tart Apple (Granny Smith), chopped
  • 1 tablespoon Cooking Oil (olive or coconut, for frying)
  • Salt, to taste
  • Pepper, to taste
  • 1 medium Bell Pepper (sautéed)
  • 1 cup Mushrooms (sautéed)
  • 1 tablespoon Maple Syrup (for a drizzle of sweetness)
  • 1 cup Vegan Cheese (stirred in for richness)

Instructions

  1. Prepare Your Ingredients: Start by peeling and grating the sweet potatoes. Chop the Granny Smith apple and set aside. Prepare your sautéed bell pepper and mushrooms; this can be done in advance.
  2. Heat the Oil: In a large skillet, heat the cooking oil over medium heat. Let it shimmer—you want it hot enough to give your hash browns that lovely golden brown color.
  3. Combine Ingredients: In a large mixing bowl, combine the grated sweet potatoes, chopped apple, sautéed bell pepper, and mushrooms. Season with salt and pepper to taste.
  4. Cook the Hash Browns: Add the sweet potato mixture to the hot skillet, pressing it down gently to form an even layer. Allow it to cook undisturbed for about 5-7 minutes until it starts to brown on the bottom.
  5. Flip and Finish: Carefully flip the hash browns (you can do this in sections with a spatula if preferred). Allow them to cook for another 5-7 minutes until golden brown and tender.
  6. Add Sweetness and Cheese: Drizzle the maple syrup over the hash browns, followed by stirring in the vegan cheese until melted and incorporated. Cook for an additional 2-3 minutes.
  7. Serve Warm: Serve your Caramelized Sweet Potato Apple Hash Browns warm, topped with additional maple syrup if desired.

Notes

Customize with citrus zest, fresh herbs, or nuts for added flavor and texture.
