Ingredients

  • 2 boneless, skinless chicken breasts, sliced
  • 2 cups chow mein noodles
  • 2 cups mixed vegetables (bell peppers, carrots, bean sprouts)
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon cornstarch
  • 1/2 cup chicken broth
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Cook chow mein noodles according to package instructions, then drain and set aside.
  2. In a large skillet or wok, heat vegetable oil over medium-high heat. Add the sliced chicken and cook until browned and cooked through.
  3. Add minced garlic and mixed vegetables to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
  4. In a small bowl, combine soy sauce, oyster sauce, cornstarch, chicken broth, and sesame oil. Mix well.
  5. Pour the sauce over the chicken and vegetables, stirring to coat evenly. Cook for an additional 2-3 minutes until the sauce thickens.
  6. Add the cooked chow mein noodles to the skillet and toss everything together until well combined.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with chopped green onions.
