- 40 oz Refrigerated chocolate chip cookie dough
- 16 oz Cream cheese, softened
- 1 large egg, at room temperature
- 1/4 cup Granulated sugar
- 1/2 teaspoon vanilla extract
- 1 teaspoon lemon juice (optional for a zesty touch)
Instructions
- Preheat your oven to 350 degrees F.
- Place the chocolate chip cookie dough in the freezer for a few hours to make it easier to slice.
- Allow the cream cheese to soften at room temperature.
- Set the large egg out until it is at room temperature.
- Line a 13×9-inch pan with parchment paper or non-stick foil for easy removal.
- Slice half of the cookie dough into 1/4-inch thick slices and place them in the bottom of the lined pan. Press the cookie dough down firmly to form a crust.
- Bake in the preheated oven for 10 minutes, until just golden.
- While the crust is baking, beat the softened cream cheese, egg, granulated sugar, and vanilla extract together with an electric mixer on medium speed until smooth and creamy.
- As soon as the crust comes out of the oven, spread the cheesecake batter evenly over it.
- Slice the remaining cookie dough and place it over the cheesecake layer, evenly distributing.
- Return the pan to the oven and bake for an additional 35 to 40 minutes, until the cheesecake is set.
- Allow the dessert to cool, then refrigerate before serving for the best texture.
Notes
These bars can be made a day ahead. For perfect slices, dip your knife in hot water and wipe it clean between cuts.
