Description

Ingredients

  • 1 cup cooked chicken, shredded
  • 1 cup street corn (corn off the cob or canned corn)
  • 1/4 cup diced red onion
  • 1/2 cup diced bell pepper
  • 1/4 cup chopped cilantro
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Combine the cooked rice, shredded chicken, street corn, red onion, bell pepper, and cilantro in a large bowl.
  2. Whisk together lime juice, olive oil, salt, and pepper in a small bowl to make the dressing.
