- 1 package Oreo cookies (crushed)
- 1/2 cup unsalted butter (melted)
- 2 packages (8 oz each) cream cheese (softened)

- 1/2 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
Instructions
- Preheat the oven to 325°F (160°C) and grease a 9×9 inch baking pan.
- Mix the crushed Oreo cookies with melted butter until it resembles wet sand. Press this mixture into the bottom of the prepared pan to form a crust.
- In a large mixing bowl, beat the softened cream cheese with sugar and vanilla until the mixture is smooth and creamy.
- Add the eggs one at a time, mixing well after each addition, resulting in a velvety texture.
- Stir in the sour cream until well incorporated; it will add a delightful tanginess.
- Pour the cheesecake batter evenly over the Oreo crust.
- Bake in the oven for 30-35 minutes, until the center is set but still slightly jiggly, ensuring a creamy consistency.
- Let the bars cool completely at room temperature before proceeding.
- For the ganache, heat the heavy cream until it starts to simmer, then pour it over the chocolate chips. Allow it to sit for a few minutes before stirring until smooth and glossy.
- Pour the ganache over the cooled cheesecake bars, spreading it evenly for an alluring finish.
- Refrigerate for at least 240 minutes, allowing everything to set before slicing into beautiful bars.
Notes
For easier slicing, run your knife under warm water in between each cut. These bars can be made a day in advance for better flavor.
