Description

Delicious low carb muffins packed with protein, perfect for busy mornings or a sweet snack.


Ingredients

  • 1 cup almond flour
  • 1/4 cup protein powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3 large eggs
  • 1/4 cup unsweetened applesauce
  • 1/4 cup almond milk
  • 1 tsp vanilla extract
  • Optional: Sweetener to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine the almond flour, protein powder, baking powder, and salt in a mixing bowl.
  3. Whisk together the eggs, unsweetened applesauce, almond milk, and vanilla extract in another bowl until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Add sweetener to taste, if desired.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  8. Allow to cool before transferring to a wire rack.

Notes

For variations, try adding blueberries, sugar-free chocolate chips, pumpkin puree, or a swirl of peanut butter.
