Ingredients

- 2 lbs chicken thighs, boneless and skinless
- 2 cups sweet potatoes, diced
- 2 cups carrots, sliced
- 1 can (14.5 oz) diced tomatoes
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream (optional)
- 2 tsp dried thyme
- 2 tsp dried rosemary
- Salt and pepper to taste
Instructions
- Combine the chicken, sweet potatoes, carrots, diced tomatoes, onion, and garlic in the slow cooker.
- Pour the chicken broth over the mixture.
- Add the dried thyme, dried rosemary, salt, and pepper.
- Stir gently to combine all the ingredients together.
- Cover and cook on low for 360-480 minutes or on high for 180-240 minutes.
- Stir in the heavy cream during the last 30 minutes of cooking if using.
- Serve hot, and enjoy the comforting flavors!
Notes
This stew can be made ahead and stored for up to 3 days in the refrigerator. It can also be frozen for up to 3 months. Customize by adding greens or different proteins as preferred.
