Description

A hearty and nourishing slow cooker stew with chicken thighs, sweet potatoes, and aromatic herbs, perfect for chilly evenings.


Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • 2 cups sweet potatoes, diced
  • 2 cups carrots, sliced
  • 1 can (14.5 oz) diced tomatoes
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream (optional)
  • 2 tsp dried thyme
  • 2 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Combine the chicken, sweet potatoes, carrots, diced tomatoes, onion, and garlic in the slow cooker.
  2. Pour the chicken broth over the mixture.
  3. Add the dried thyme, dried rosemary, salt, and pepper.
  4. Stir gently to combine all the ingredients together.
  5. Cover and cook on low for 360-480 minutes or on high for 180-240 minutes.
  6. Stir in the heavy cream during the last 30 minutes of cooking if using.
  7. Serve hot, and enjoy the comforting flavors!

Notes

This stew can be made ahead and stored for up to 3 days in the refrigerator. It can also be frozen for up to 3 months. Customize by adding greens or different proteins as preferred.
