A comforting and hearty soup filled with Italian sausage, beans, and fresh vegetables, perfect for chilly nights.

- 1 pound Italian sausage
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 6 cups vegetable or chicken broth
- 2 cans (15 oz each) cannellini beans, rinsed and drained
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 4 cups fresh spinach
- Juice of 1 lemon
- Olive oil for drizzling
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat.
- Add the Italian sausage and cook until browned, letting those delicious flavors develop.
- Toss in the chopped onion, diced carrots, and celery. Sauté until soft, about 5-7 minutes, while stirring occasionally.
- Stir in the minced garlic and cook for another minute until fragrant.
- Pour in the broth and bring it to a rolling boil.
- Add the rinsed cannellini beans, dried thyme, oregano, and season with salt and pepper. Stir gently to combine.
- Reduce the heat and let the soup simmer for 20-25 minutes.
- Stir in the fresh spinach and cook until it’s just wilted.
- Squeeze the juice of one lemon into the pot before serving.
Notes
This soup can be made ahead of time and stored in the fridge for up to five days. It also freezes well, but leave out the spinach until serving.
