Description

A heartwarming bowl of comfort filled with tender pork dumplings and rich broth, perfect for chilly evenings.


Ingredients

  • 8 ounces ground beef (70% lean / 30% fat)
  • 3 tablespoons water
  • 2 tablespoons light sodium soy sauce
  • 1 tablespoon oyster sauce
  • ½ tablespoon Shaoxing rice wine substitute (broth or juice)
  • ¾ teaspoon dark soy sauce (optional)
  • 1 stalk green onion (thinly sliced)
  • 44 sheets wonton wrapper
  • 8 cups unsalted chicken stock (or water)
  • 1½ tablespoons Shaoxing rice wine substitute
  • 1 tablespoon chicken bouillon powder
  • 2½ teaspoons salt
  • ½ teaspoon granulated sugar
  • ¼ teaspoon dark soy sauce
  • Dash of white pepper
  • 1 teaspoon toasted sesame oil
  • 1 stalk green onion (thinly sliced)

Instructions

  1. Combine the ground beef, water, light soy sauce, oyster sauce, Shaoxing rice wine substitute, and thinly sliced green onion in a mixing bowl. Mix well until everything is fully combined and fragrant.
  2. Take a wonton wrapper and place about a teaspoon of the meat mixture in the center. Moisten the edges with water, fold the wrapper over, and shape it into a little parcel. Repeat for all wontons.
  3. Bring a large pot with chicken stock or water to a rapid boil. Add the Shaoxing rice wine substitute, chicken bouillon powder, salt, granulated sugar, dark soy sauce, white pepper, and toasted sesame oil. Let bubble for a few moments to develop rich flavors.
  4. Add the wontons to the pot, stirring gently to ensure they don’t stick together. Cook for about 5-7 minutes, or until the wontons float to the top and become tender.
  5. Ladle the steaming soup into bowls, sprinkle with additional green onion, and serve immediately.

Notes

Make ahead by preparing wontons in advance and freezing them. Store leftover soup and wontons separately.
