Description

Ingredients

  • 4 chicken breasts
  • 2 cups spinach
  • 1 cup cherry tomatoes
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper and add them to the skillet. Cook for about 6-7 minutes on each side or until golden brown and cooked through. Remove from the skillet and set aside.
  2. Add minced garlic to the same skillet and sauté for about 30 seconds until fragrant.
  3. Toss in the cherry tomatoes and cook until they start to soften and burst slightly.
  4. Pour in the heavy cream, stirring in the parmesan cheese until melted and combined.
  5. Add the spinach and cook until wilted, stirring to incorporate everything into the sauce.
  6. Return the chicken to the skillet, coating it with the sauce.
  7. Garnish with fresh basil before serving. Enjoy!
