  • 1/2 cup Parmesan Cheese (Can use nutritional yeast for a vegan option)

Instructions

  1. Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add your chosen pasta and cook according to the package instructions until al dente. Reserve about 1/2 cup of pasta water, then drain the rest and set aside.
  2. Sauté the Mushrooms: In a large skillet, heat the olive oil over medium heat. Add the mushrooms and sauté them for about 5-7 minutes until they are golden brown, tender, and most of their moisture has evaporated.
  3. Add Garlic and Spinach: Sprinkle in the minced garlic and cook for an additional minute until fragrant. Next, add in the fresh spinach, stirring until wilted.
  4. Create the Creamy Sauce: Pour in the heavy cream, stirring to combine. Bring the mixture to a gentle simmer, letting it thicken slightly. You can adjust the richness by adding some of the reserved pasta water if needed.
  5. Mix in the Pasta: Gently fold in the cooked pasta until it’s well-coated in the creamy sauce. Stir in the Parmesan cheese, salt, and pepper, ensuring everything is evenly combined.
