Description

A cozy and satisfying weeknight dinner featuring sausage links and colorful vegetables, seasoned with Cajun spices.


Ingredients

Scale
  • 1 pound of sausage links (your choice of beef or chicken)
  • 1 bell pepper, sliced (any color works)
  • 1 medium onion, chopped
  • 1 zucchini, sliced
  • 2 cloves of garlic, minced
  • 1 cup of chicken broth
  • 2 tablespoons of olive oil
  • 1 teaspoon of Cajun seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil over medium heat in a large skillet.
  2. Add the sausage links and sear until golden brown, about 4–5 minutes.
  3. Remove the sausage from the skillet and set aside.
  4. Toss in the chopped onion and bell pepper; sauté for about 3–4 minutes.
  5. Add the zucchini and garlic, continuing to sauté for an additional 2–3 minutes.
  6. Return the sausage to the skillet, add Cajun seasoning, salt, and pepper, stirring well.
  7. Pour in the chicken broth and bring to a gentle simmer for about 5 minutes.
  8. Serve hot, garnished with fresh parsley.

Notes

Make ahead by prepping the veggies and sausage the night before to save time. Leftovers last up to 3 days in the refrigerator.
