Description

A refreshing and vibrant pasta salad, perfect for warm days and gatherings. A delightful mix of colorful vegetables and zesty dressing.


Ingredients

  • 2 cups cooked pasta (like fusilli or penne)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup bell pepper, chopped
  • 1/4 cup red onion, finely chopped
  • 1/2 cup black olives, sliced
  • 1/2 cup mozzarella balls
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, red onion, black olives, and mozzarella balls.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, salt, and pepper.
  3. Pour the dressing over the pasta salad and toss to combine.
  4. Stir in the fresh basil.
  5. Chill for at least 30 minutes before serving.
