A warm and comforting dish of creamy noodles tossed in a rich peanut sauce, packed with fresh vegetables.
Ingredients

- 2 tablespoons vegetable oil
- 8 ounces linguine (or ramen, spaghetti, fettuccini)
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 carrot, julienned
- 1/4 cup soy sauce (or Tamari, or Coconut Aminos)
- 2 tablespoons honey (or agave syrup, or brown sugar)
- 1/2 cup peanut butter
- 1 tablespoon chili sauce
- 1/4 cup chopped peanuts
- 2 green onions, chopped
- 1 tablespoon sesame seeds
Instructions
- Cook the noodles according to package instructions. Once tender, drain and set aside.
- Heat the vegetable oil in a large skillet over medium heat. Add the minced garlic, diced bell pepper, and julienned carrot. Sauté until softened, about 4-5 minutes.
- Whisk together the soy sauce, honey, peanut butter, and chili sauce in a separate bowl until smooth and creamy.
- Add the cooked noodles to the skillet with the sautéed veggies. Drizzle the sauce over everything and toss gently to combine.
- Transfer the noodles to serving bowls and top with chopped peanuts, sliced green onions, and a sprinkle of sesame seeds. Enjoy warm!
Notes
Feel free to customize with your favorite vegetables or proteins. The peanut sauce can be made ahead and stored in the refrigerator.
