Description

A warm and comforting dish of creamy noodles tossed in a rich peanut sauce, packed with fresh vegetables.


Ingredients

  • 2 tablespoons vegetable oil
  • 8 ounces linguine (or ramen, spaghetti, fettuccini)
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 carrot, julienned
  • 1/4 cup soy sauce (or Tamari, or Coconut Aminos)
  • 2 tablespoons honey (or agave syrup, or brown sugar)
  • 1/2 cup peanut butter
  • 1 tablespoon chili sauce
  • 1/4 cup chopped peanuts
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds

Instructions

  1. Cook the noodles according to package instructions. Once tender, drain and set aside.
  2. Heat the vegetable oil in a large skillet over medium heat. Add the minced garlic, diced bell pepper, and julienned carrot. Sauté until softened, about 4-5 minutes.
  3. Whisk together the soy sauce, honey, peanut butter, and chili sauce in a separate bowl until smooth and creamy.
  4. Add the cooked noodles to the skillet with the sautéed veggies. Drizzle the sauce over everything and toss gently to combine.
  5. Transfer the noodles to serving bowls and top with chopped peanuts, sliced green onions, and a sprinkle of sesame seeds. Enjoy warm!

Notes

Feel free to customize with your favorite vegetables or proteins. The peanut sauce can be made ahead and stored in the refrigerator.
