- 1 zucchini, diced
- 1 bell pepper, diced
- 1 can diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion, carrots, and celery; sauté until soft and fragrant, about 5-7 minutes.
- Stir in the minced garlic, diced zucchini, and bell pepper. Cook for an additional 5 minutes.
- Add in the diced tomatoes, vegetable broth, oregano, and thyme. Stir well to combine.
- Bring to a gentle boil, then reduce the heat and let it simmer for 20-30 minutes.
- Season with salt and pepper to taste, adjusting according to your preference.
- Serve hot, garnished with fresh parsley if desired.
