- 1 lb ground chicken
- 2 cups shredded cheese (cheddar or Monterey Jack)
- 4 large flour tortillas
- 1 cup diced bell peppers
- 1 cup salsa
Instructions
- In a skillet over medium heat, cook the ground chicken until it’s beautifully browned, about 5-7 minutes.
- Add the diced bell peppers to the skillet and cook until they’re softened, around 3-4 minutes.
- On one half of a tortilla, add a generous portion of the chicken mixture, top with shredded cheese, and fold the tortilla over.
- Carefully transfer the quesadilla to the skillet. Cook on medium heat until both sides are golden brown and the cheese is melted, about 3-4 minutes per side.
- Serve your quesadillas with salsa for dipping. Enjoy!
Notes
Make-ahead by pre-cooking the chicken mixture and storing it in the fridge. Freezer-friendly: assemble and freeze uncooked quesadillas.
