Description

These Extra Cheesy Ground Chicken Quesadillas are a delightful and comforting dish, perfect for quick dinners and gatherings.


Ingredients

  • 1 lb ground chicken
  • 2 cups shredded cheese (cheddar or Monterey Jack)
  • 4 large flour tortillas
  • 1 cup diced bell peppers
  • 1 cup salsa

Instructions

  1. In a skillet over medium heat, cook the ground chicken until it’s beautifully browned, about 5-7 minutes.
  2. Add the diced bell peppers to the skillet and cook until they’re softened, around 3-4 minutes.
  3. On one half of a tortilla, add a generous portion of the chicken mixture, top with shredded cheese, and fold the tortilla over.
  4. Carefully transfer the quesadilla to the skillet. Cook on medium heat until both sides are golden brown and the cheese is melted, about 3-4 minutes per side.
  5. Serve your quesadillas with salsa for dipping. Enjoy!

Notes

Make-ahead by pre-cooking the chicken mixture and storing it in the fridge. Freezer-friendly: assemble and freeze uncooked quesadillas.
