- 1 cup coconut milk
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced

- 1 teaspoon red curry paste
- Salt and pepper to taste
- Skewers (soaked in water if using wood)
Instructions
- Combine coconut milk, soy sauce, brown sugar, garlic, ginger, lime juice, red curry paste, salt, and pepper in a large bowl.
- Add the chicken pieces to the bowl and coat well with the marinade.
- Cover the bowl with plastic wrap and refrigerate for at least 1 hour or overnight.
- Preheat your grill to medium-high heat.
- Thread the marinated chicken onto the soaked skewers, leaving space between pieces.
- Grill for about 10-15 minutes, turning occasionally, until cooked through.
- Serve hot with your favorite dipping sauces.
