Description

Deliciously tender chicken skewers marinated in a creamy coconut sauce, perfect for summer gatherings.


Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup coconut milk
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon lime juice
  • 1 teaspoon red curry paste
  • Salt and pepper to taste
  • Skewers (soaked in water if using wood)

Instructions

  1. Combine coconut milk, soy sauce, brown sugar, garlic, ginger, lime juice, red curry paste, salt, and pepper in a large bowl.
  2. Add the chicken pieces to the bowl and coat well with the marinade.
  3. Cover the bowl with plastic wrap and refrigerate for at least 1 hour or overnight.
  4. Preheat your grill to medium-high heat.
  5. Thread the marinated chicken onto the soaked skewers, leaving space between pieces.
  6. Grill for about 10-15 minutes, turning occasionally, until cooked through.
  7. Serve hot with your favorite dipping sauces.

Notes

Marinate chicken overnight for deeper flavor. Use soaked wooden skewers to prevent burning.
