- 1 pound boneless, skinless chicken breast
- 1 can black beans, rinsed and drained
- 1 cup brown rice, uncooked
- 1 cup corn (frozen or fresh)
- 1 red bell pepper, diced
- 1 avocado, sliced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro, for garnish
- Optional: salsa or your favorite hot sauce for extra zing
Instructions
- Cook the rice by adding brown rice and 2 cups of water to a medium saucepan. Bring to a boil, then reduce to a simmer, cover, and cook for 45 minutes or until tender.
- Prepare the chicken by heating a skillet over medium heat. Season the chicken breast with chili powder, cumin, salt, and pepper. Cook for 6-7 minutes on each side until cooked through.
- Assemble the bowls by layering cooked rice, sliced chicken, black beans, corn, and diced bell pepper in meal prep containers.
- Add toppings such as fresh avocado slices and cilantro. Optionally, add a dollop of salsa or hot sauce.
- Store the containers tightly sealed in the refrigerator for up to 5 days. Reheat in the microwave when ready to enjoy.
