- 1 can kidney beans, rinsed and drained

- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup chicken broth
- Olive oil for cooking
Instructions
- Heat olive oil in a pot over medium heat.
- Add the chopped onion, bell pepper, and minced garlic; sauté until the vegetables are soft and fragrant.
- Add ground turkey to the pot; cook until it turns a lovely golden brown.
- Stir in chili powder, cumin, salt, and pepper; cook for 1-2 minutes to awaken the spices.
- Add the rinsed beans, diced tomatoes, and chicken broth, stirring everything together nicely.
- Bring the mixture to a gentle boil, then reduce the heat and let it simmer for 20-30 minutes, allowing the flavors to meld.
- Serve hot, garnishing with your choice of toppings like fresh cilantro or a dollop of Greek yogurt if desired.
