Ingredients

  • 1 can black beans, rinsed and drained
  • 1 can kidney beans, rinsed and drained
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup chicken broth
  • Olive oil for cooking

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add the chopped onion, bell pepper, and minced garlic; sauté until the vegetables are soft and fragrant.
  3. Add ground turkey to the pot; cook until it turns a lovely golden brown.
  4. Stir in chili powder, cumin, salt, and pepper; cook for 1-2 minutes to awaken the spices.
  5. Add the rinsed beans, diced tomatoes, and chicken broth, stirring everything together nicely.
  6. Bring the mixture to a gentle boil, then reduce the heat and let it simmer for 20-30 minutes, allowing the flavors to meld.
  7. Serve hot, garnishing with your choice of toppings like fresh cilantro or a dollop of Greek yogurt if desired.
