Description

Ingredients

  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 1 cup brown rice or quinoa
  • 2 cups mixed vegetables (e.g., broccoli, bell peppers, carrots)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Extra sauce for drizzling (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix honey, minced garlic, and soy sauce in a bowl until well blended.
  3. Cut the salmon into bite-sized pieces and marinate them in the honey-garlic mixture for at least 15 minutes.
  4. Arrange the marinated salmon bites on a lined baking sheet and bake for 10-15 minutes until cooked through.
  5. Cook your grains according to package instructions and steam or sauté your chosen vegetables.
  6. Assemble the bowl with grains as the base, topped with salmon bites and veggies.
  7. Drizzle with extra sauce if desired and enjoy!
