Description

A delightful blend of sweet honey and earthy thyme creates this vibrant and healthy side dish perfect for any meal.


Ingredients

Scale
  • 1 pound colorful carrots
  • 2 tbsp butter
  • 2 tbsp honey
  • 2 tbsp brown sugar
  • Fresh thyme, to taste
  • Salt & pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel the colorful carrots, then slice them into uniform pieces.
  3. Melt the butter in a small saucepan over low heat, then stir in the honey and brown sugar until bubbling gently.
  4. Toss the sliced carrots in a large bowl with the caramel mixture, fresh thyme, salt, and pepper.
  5. Spread the carrots evenly on a lined baking sheet without overlapping.
  6. Roast in the oven for 25-30 minutes, stirring halfway, until tender and caramelized.
  7. Serve warm, garnished with extra thyme.

Notes

You can prep the carrots a day in advance and store them with the honey mixture in the fridge before roasting.
