- 1 pound colorful carrots
- 2 tbsp butter
- 2 tbsp honey
- 2 tbsp brown sugar
- Fresh thyme, to taste
- Salt & pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and peel the colorful carrots, then slice them into uniform pieces.
- Melt the butter in a small saucepan over low heat, then stir in the honey and brown sugar until bubbling gently.
- Toss the sliced carrots in a large bowl with the caramel mixture, fresh thyme, salt, and pepper.
- Spread the carrots evenly on a lined baking sheet without overlapping.
- Roast in the oven for 25-30 minutes, stirring halfway, until tender and caramelized.
- Serve warm, garnished with extra thyme.

You can prep the carrots a day in advance and store them with the honey mixture in the fridge before roasting.
