Description

Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 1 cup vegetable broth
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • Salt and pepper to taste
  • Optional Toppings: sour cream, shredded cheese, green onions

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain any excess fat.
  2. Add the chopped onion and minced garlic, sauté until the onion is translucent.
  3. Stir in the kidney beans, black beans, diced tomatoes, tomato sauce, and vegetable broth.
  4. Add the chili powder, cumin, salt, and pepper, mixing well.
  5. Bring the mixture to a gentle simmer, then reduce heat to low and let it cook for about 30-40 minutes.
  6. Serve hot, allowing everyone to personalize their bowls with optional toppings.

Notes

Make-ahead chili tastes even better the next day. Store in an airtight container in the freezer for up to three months.
