Description

A comforting meal combining the fiery kick of jalapeños with the sweetness of peaches, perfect for any season.


Ingredients

Scale
  • 4 chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 jalapeños, diced
  • 3 peaches, diced
  • 1/4 cup honey
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with salt and black pepper on both sides.
  3. Heat the olive oil in a large oven-safe skillet over medium-high heat.
  4. Add the chicken breasts to the skillet and sear for 3-4 minutes on each side until golden brown.
  5. Remove the chicken from the skillet and set aside.
  6. Add the diced jalapeños and peaches to the same skillet and cook for 2-3 minutes until slightly softened.
  7. Whisk together the honey, apple cider vinegar, water, and cornstarch until smooth in a small bowl.
  8. Pour the honey mixture over the jalapeños and peaches and bring to a simmer.
  9. Return the chicken breasts to the skillet, spooning some of the sauce over the top.
  10. Transfer the skillet to the oven and bake for 20-25 minutes or until the chicken is cooked through.
  11. Remove from the oven and let rest for a few minutes before serving.
  12. Serve hot, spooning the luscious sauce over the chicken.

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat gently.
