Description

Delightful Key Lime Cupcakes that bring a burst of sunshine and zesty flavors, perfect for any occasion.


Ingredients

Scale
  • 1 box White Cake Mix + box ingredients (eggs, oil, water)
  • 1/2 cup Lime Juice
  • 1 cup Butter (softened)
  • 4 cups Powdered Sugar
  • 6 tbsp Lime Juice
  • 2 tsp Lime Zest
  • 1 drop Green Food Colouring

Instructions

  1. Preheat your oven to 350°F (175°C) and line your muffin tins with cupcake liners.
  2. Prepare the cake batter according to the package instructions, replacing 1/2 cup of the water with lime juice.
  3. Fill the cupcake liners about 1/2 full with the batter.
  4. Bake for 16-18 minutes, or until a toothpick inserted in the middle comes out clean. Let cool completely.
  5. Cream the butter until fluffy in a large bowl.
  6. Add lime juice and food coloring to the creamed butter.
  7. Gradually add the powdered sugar, one cup at a time, and beat until well incorporated.
  8. Stir in the lime zest and whip until smooth.
  9. Transfer the frosting to a piping bag and frost your cooled cupcakes.

Notes

You can adapt this recipe by adding coconut or a graham cracker layer on top for a key lime pie feel.
