- 1 box White Cake Mix + box ingredients (eggs, oil, water)
- 1/2 cup Lime Juice
- 1 cup Butter (softened)
- 4 cups Powdered Sugar
- 6 tbsp Lime Juice
- 2 tsp Lime Zest
- 1 drop Green Food Colouring
Instructions
- Preheat your oven to 350°F (175°C) and line your muffin tins with cupcake liners.
- Prepare the cake batter according to the package instructions, replacing 1/2 cup of the water with lime juice.
- Fill the cupcake liners about 1/2 full with the batter.
- Bake for 16-18 minutes, or until a toothpick inserted in the middle comes out clean. Let cool completely.
- Cream the butter until fluffy in a large bowl.
- Add lime juice and food coloring to the creamed butter.
- Gradually add the powdered sugar, one cup at a time, and beat until well incorporated.
- Stir in the lime zest and whip until smooth.
- Transfer the frosting to a piping bag and frost your cooled cupcakes.
Notes
You can adapt this recipe by adding coconut or a graham cracker layer on top for a key lime pie feel.
