Description

Easy and delightful Lemon Spritz Cookies with a crispy edge and tender center, perfect for sharing.

Ingredients

Scale
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tablespoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract (optional)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Whisk together the flour, baking powder, and salt until well combined.
  3. Beat the softened butter and granulated sugar together until creamy and fluffy.
  4. Add the egg, lemon zest, vanilla extract, and almond extract, mixing until fully incorporated.
  5. Gradually add the flour mixture to the wet ingredients, mixing just until combined to avoid overmixing.
  6. Fill a cookie press with the dough and press it onto ungreased baking sheets to form fun shapes.
  7. Bake for 8-10 minutes or until the cookies are lightly golden around the edges.
  8. Allow the cookies to cool before dusting with powdered sugar if desired.

Notes

Make ahead and refrigerate the dough for up to a week. Frozen shaped cookies can be baked directly from frozen.
