- 4 large russet potatoes
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese
- 1/4 cup milk
- 1/2 cup cooked turkey bacon, crumbled
- 1/4 cup green onions, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Peel and cube the potatoes, then boil them in salted water until tender.
- Drain and mash the potatoes until smooth.
- In a large bowl, combine the mashed potatoes, sour cream, cream cheese, milk, and half of the cheddar cheese. Stir until well blended.
- Gently fold in crumbled turkey bacon and chopped green onions, then season with salt and pepper to taste.
- Transfer the mixture to a greased baking dish and spread it evenly.
- Top with the remaining cheddar cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Serve hot and enjoy every comforting bite!

You can assemble the casserole a day in advance and store it covered in the fridge before baking.
