Description

A creamy, cheesy casserole made with mashed russet potatoes, turkey bacon, and green onions, perfect for weeknight dinners or holiday gatherings.


Ingredients

  • 4 large russet potatoes
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese
  • 1/4 cup milk
  • 1/2 cup cooked turkey bacon, crumbled
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel and cube the potatoes, then boil them in salted water until tender.
  3. Drain and mash the potatoes until smooth.
  4. In a large bowl, combine the mashed potatoes, sour cream, cream cheese, milk, and half of the cheddar cheese. Stir until well blended.
  5. Gently fold in crumbled turkey bacon and chopped green onions, then season with salt and pepper to taste.
  6. Transfer the mixture to a greased baking dish and spread it evenly.
  7. Top with the remaining cheddar cheese.
  8. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  9. Serve hot and enjoy every comforting bite!

Notes

You can assemble the casserole a day in advance and store it covered in the fridge before baking.
