- 2 ripe bananas, mashed
- 1/2 cup cream cheese, softened
- 1/4 cup sugar
- 1/2 cup brown sugar
- 1/4 cup vegetable oil
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup chopped pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mix together the mashed bananas, cream cheese, sugar, brown sugar, and vegetable oil until well combined.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Whisk together the flour, baking soda, baking powder, and salt in another bowl.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Fold in the chopped pecans if using.
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
These muffins can be made in advance and stored in an airtight container for up to 3 days. Freeze any leftovers for a quick breakfast in the future.
