Ingredients

  • 3/4 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  2. Combine flour, cocoa powder, sugar, baking powder, baking soda, and salt in a large bowl. Mix until well combined.
  3. Add eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix on medium speed for about 2 minutes.
  4. Stir in boiling water; the batter will be thin.
  5. Fold in chocolate chips until evenly distributed.
  6. Pour batter into cupcake liners, filling them about 2/3 full.
  7. Bake for 20-22 minutes or until a toothpick inserted comes out clean.
  8. Allow to cool completely before frosting.
  9. Frost cooled cupcakes with melted chocolate mixed with butter, powdered sugar, and a splash of milk until smooth.
