- 2 (6–8 oz) filet mignon steaks, 1.5–2 inches thick
- 1 tbsp kosher salt
- 1 tsp black pepper
- 2 tbsp avocado oil
- 3 tbsp unsalted butter
- 2 garlic cloves, crushed
- 2 sprigs fresh thyme
Instructions
- Preheat your oven to 275°F.
- Pat the steaks dry with a paper towel, and season generously with kosher salt and black pepper.
- Allow the steaks to rest for 30 minutes.
- Heat the avocado oil in a heavy skillet over high heat until it smokes.
- Gently place the seasoned steaks in the pan and sear for 2 minutes on each side.
- Add the butter, crushed garlic, and fresh thyme to the skillet.
- Baste the steaks with the fragrant mixture for about 1 minute.
- Transfer the skillet to the preheated oven and bake for 8–12 minutes.
- Remove the skillet from the oven and let the steaks rest for 10 minutes before slicing.
Notes
For added flavor, consider mixing in lemon zest or fresh herbs with the butter before basting.
