Description

A cozy summer dessert featuring a golden crust, luscious peach filling, and a decadent streusel topping.


Ingredients

  • 2 1/2 cups (350 g) all-purpose flour
  • 2/3 cup (140 g) granulated sugar
  • 1/2 teaspoon salt
  • 1 1/4 cups (280 g) cold unsalted butter, cut into small cubes
  • 1/4 cup (50 g) brown sugar, preferably dark
  • 1 cup (200 g) granulated sugar
  • 1/4 cup (35 g) all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 5 cups pitted, peeled, and chopped peaches (about 78 peaches)
  • 6 tablespoons (90 ml) heavy cream
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 350°F (180°C). Grease a 9×13-inch pan or line with parchment paper.
  2. Combine the flour, granulated sugar, and salt in a food processor. Pulse briefly until combined. Add the cold butter and pulse until it resembles coarse meal.
  3. Reserve 1 ½ cups of the crumb mixture for the topping. Press the remaining crumbs into the prepared pan to create the crust.
  4. Bake for about 15 minutes, until the edges start to turn slightly golden.
  5. Prepare the streusel topping by adding the brown sugar to the reserved crumb mixture and tossing until large clumps form.
  6. Mix the sugar, 1/4 cup of flour, cinnamon, and salt in a large bowl. Add the chopped peaches and toss to coat.
  7. Add heavy cream and vanilla extract to the peach mixture and stir well.
  8. Pour the warm peach mixture over the crust and sprinkle the streusel topping on top.
  9. Bake for 45 minutes, until the juice is bubbling and the top is golden brown.
  10. Allow the bars to cool completely on a wire rack and refrigerate for at least 2 hours before cutting into squares.

Notes

These bars can be stored in the refrigerator for up to 3 days or frozen for up to a month.
