Description

Ingredients

  • 1 can of pineapple rings or 1 fresh pineapple, sliced
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup milk
  • 1 egg
  • Oil for frying
  • Powdered sugar for dusting (optional)

Instructions

  1. If using fresh pineapple, slice it into rings and pat them dry with paper towels.
  2. In a bowl, mix together the flour, sugar, baking powder, baking soda, salt, and cinnamon until well combined.
  3. In another bowl, whisk together the milk and egg until smooth and creamy.
  4. Gradually combine the wet and dry ingredients, mixing just until incorporated. Be careful not to overmix; a few lumps are perfectly fine!
  5. Heat the oil in a frying pan over medium heat, ensuring it’s hot but not smoking.
  6. Carefully dip each pineapple ring into the batter, allowing any excess to drip off.
  7. Place the battered rings into the hot oil and fry until golden brown on both sides, about 2-3 minutes per side.
  8. Remove them from the oil and drain on paper towels to absorb any excess oil.
  9. Dust with powdered sugar if desired, and serve warm for a delectable treat.
