- 8 oz pasta (penne or rotini)
- 1 lb Italian sausage (mild or spicy)
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh basil or parsley for garnish
- Parmesan cheese for serving
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat.
- Add the chopped onions and garlic, sautéing until the onions are translucent and fragrant.
- Add the Italian sausage, breaking it apart with a spatula. Cook until browned and cooked through.
- Stir in the diced tomatoes and heavy cream, letting it simmer for a few minutes until well combined and creamy.
- Season with salt and pepper to taste.
- Add the cooked pasta to the skillet, tossing to coat the pasta generously in the sauce.
- Serve hot, garnished with fresh basil or parsley and sprinkled with Parmesan cheese.
Notes
Make-ahead: the sauce can be prepared ahead and stored in the fridge. Store leftovers in an airtight container for up to 3 days.
