- 1 cup low-fat cream cheese, softened
- 1/2 cup Greek yogurt

- 1/2 cup shredded coconut
- 2 teaspoons vanilla extract
- 2 large eggs
Instructions
- Preheat the oven to 325°F (160°C). Grease an 8×8 inch baking pan.
- Mix the graham cracker crumbs with melted coconut oil until combined and crumbly. Press mixture into the bottom of the prepared pan.
- Beat the low-fat cream cheese in a bowl until smooth and creamy. Add Greek yogurt, sweetener, shredded coconut, and vanilla extract; mix until well combined.
- Crack the eggs into the mixture one at a time, mixing gently until just incorporated.
- Pour the cheesecake mixture over the crust in the baking pan, spreading it evenly.
- Bake in the preheated oven for 25-30 minutes, until the center is set but slightly jiggly.
- Allow the bars to cool completely, then refrigerate for at least 2 hours before slicing.
