- 1 pound small red potatoes
- 2 cloves garlic, minced
- 3 tablespoons unsalted butter
- 1 cup shredded cheese (cheddar or your favorite blend)
- 2 tablespoons chives, chopped

Instructions
- Start by boiling the small red potatoes in a large pot of salted water until they are slightly soft, about 15-20 minutes.
- Once boiled, drain the potatoes and let them cool slightly.
- Gently smash each potato with a fork or the bottom of a cup, aiming for a rustic look.
- In a small saucepan, melt the butter over medium heat.
- Add the minced garlic and sauté it until fragrant, about 1-2 minutes.
- Brush each smashed potato generously with the garlic butter mixture, seasoning with salt and pepper to your liking.
- Top the potatoes with shredded cheese and chopped chives.
- Roast in the oven at 425°F (220°C) until golden and crispy, about 20-25 minutes.
