Description

Creamy garlic smashed potatoes that are tender inside with crispy edges for a comforting side dish.


Ingredients

  • 1 pound small red potatoes
  • 2 cloves garlic, minced
  • 3 tablespoons unsalted butter
  • 1 cup shredded cheese (cheddar or your favorite blend)
  • 2 tablespoons chives, chopped
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Start by boiling the small red potatoes in a large pot of salted water until they are slightly soft, about 15-20 minutes.
  2. Once boiled, drain the potatoes and let them cool slightly.
  3. Gently smash each potato with a fork or the bottom of a cup, aiming for a rustic look.
  4. In a small saucepan, melt the butter over medium heat.
  5. Add the minced garlic and sauté it until fragrant, about 1-2 minutes.
  6. Brush each smashed potato generously with the garlic butter mixture, seasoning with salt and pepper to your liking.
  7. Top the potatoes with shredded cheese and chopped chives.
  8. Roast in the oven at 425°F (220°C) until golden and crispy, about 20-25 minutes.
