Ingredients

  • 2 medium sweet potatoes, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) corn, drained
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic; sauté until onion is translucent.
  2. Add ground turkey and cook until browned, breaking it up with a spoon as it cooks.
  3. Stir in chili powder, cumin, salt, and pepper for that warming, aromatic kick.
  4. Add diced sweet potatoes, diced tomatoes, corn, and chicken broth. Bring to a boil, letting the flavors meld perfectly.
