Description

A heartwarming Taco Bake Casserole filled with cheesy goodness and classic taco flavors, perfect for family dinners or gatherings.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 9 corn tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 can black beans, drained and rinsed
  • 1 cup salsa
  • 1 cup sour cream
  • 1/4 cup chopped green onions
  • Optional toppings: diced tomatoes, jalapeños, lettuce

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the ground beef in a skillet over medium heat until browned and drain any excess fat.
  3. Stir in the taco seasoning and cook according to packet instructions.
  4. Layer 3 tortillas, half of the meat mixture, half of the black beans, half of the cheese, and half of the salsa in a baking dish. Repeat the layers.
  5. Top with the remaining tortillas, cheese, and optional toppings.
  6. Bake for 20-25 minutes, or until the cheese is bubbly and golden.
  7. Let cool for a few minutes before serving with sour cream and green onions.

Notes

For best results, prepare the casserole a day in advance or freeze leftovers for up to 3 months.
