Ingredients

- 1 lb ground beef
- 1 packet taco seasoning
- 9 corn tortillas
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 can black beans, drained and rinsed
- 1 cup salsa
- 1 cup sour cream
- 1/4 cup chopped green onions
- Optional toppings: diced tomatoes, jalapeños, lettuce
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the ground beef in a skillet over medium heat until browned and drain any excess fat.
- Stir in the taco seasoning and cook according to packet instructions.
- Layer 3 tortillas, half of the meat mixture, half of the black beans, half of the cheese, and half of the salsa in a baking dish. Repeat the layers.
- Top with the remaining tortillas, cheese, and optional toppings.
- Bake for 20-25 minutes, or until the cheese is bubbly and golden.
- Let cool for a few minutes before serving with sour cream and green onions.
Notes
For best results, prepare the casserole a day in advance or freeze leftovers for up to 3 months.
