Description

A comforting casserole combining crispy hash browns, seasoned ground beef, and gooey melted cheese, perfect for busy weeknights.

Ingredients

Scale
  • 1 1/2 pounds lean ground beef
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup beef broth
  • 1 package (30 ounces) frozen shredded hash browns, thawed
  • 2 tablespoons melted butter
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1 cup sour cream
  • 1 1/2 cups shredded cheddar cheese
  • 1 1/2 cups shredded Monterey Jack cheese

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with butter or cooking spray.
  2. Add the ground beef and onion to a skillet over medium-high heat and cook for 6–8 minutes, breaking into small crumbles.
  3. Stir in minced garlic and cook for another 30 seconds, then add tomato paste, spices, and beef broth. Let simmer for 2–3 minutes.
  4. Toss the hash browns with melted butter, garlic powder, paprika, and salt until coated.
  5. Add sour cream and half of the cheeses to the hash browns, folding until combined.
  6. Spread half of the hashbrown mixture in the baking dish, then layer half of the taco beef, followed by the remaining hashbrown mixture and beef.
  7. Sprinkle the remaining cheese over the top of the casserole.
  8. Cover with foil and bake for 25 minutes, then uncover and bake for an additional 15 minutes until bubbling.
  9. Let the casserole rest for 5–10 minutes before serving.

Notes

For an extra cheesy bake, add another cup of shredded cheese before baking. Allow leftovers to cool and store in an airtight container.
