Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream together the softened butter, brown sugar, and granulated sugar until smooth and creamy.
- Beat in the egg and vanilla extract until well combined.
- Whisk together the flour, baking powder, baking soda, and salt in another bowl. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the diced mango, and if you choose, add your shredded coconut and chopped macadamia nuts.
- Drop balls of dough onto the prepared baking sheet, ensuring there’s about 2 inches between them.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
