  • 1/2 cup shredded coconut (optional)
  • 1/4 cup chopped macadamia nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth and creamy.
  3. Beat in the egg and vanilla extract until well combined.
  4. Whisk together the flour, baking powder, baking soda, and salt in another bowl. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Fold in the diced mango, and if you choose, add your shredded coconut and chopped macadamia nuts.
  6. Drop balls of dough onto the prepared baking sheet, ensuring there’s about 2 inches between them.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
