Description

Creamy Tuscan Chicken is a cozy weeknight dinner, combining tender chicken with a rich blend of spinach, sun-dried tomatoes, and parmesan cheese.


Ingredients

  • 2 chicken breasts
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1/4 cup fresh basil, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook until browned on both sides and cooked through, approximately 7-8 minutes per side.
  3. Remove the chicken and set aside on a plate.
  4. Add minced garlic to the same skillet and sauté for about a minute until fragrant.
  5. Add sun-dried tomatoes, fresh spinach, and basil; cook until the spinach is wilted.
  6. Pour in the heavy cream and stir well, allowing it to bubble gently.
  7. Add parmesan cheese, stirring until melted and the sauce thickens.
  8. Return the chicken to the skillet, coating it generously with the sauce.
  9. Serve hot, and enjoy!

Notes

For best results, let the chicken rest before slicing to retain juices. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
