Description

A warm and comforting Twice Baked Potato Casserole that’s cheesy, creamy, and perfect for any occasion.


Ingredients

  • 4 large baking potatoes
  • 1 cup sour cream
  • 1/2 cup milk
  • 4 tablespoons butter
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled turkey bacon
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Bake the potatoes for about 45 minutes or until they are tender to the touch.
  3. Let the potatoes cool slightly, then scoop out the insides and place them in a mixing bowl.
  4. Add the sour cream, milk, butter, cheese, turkey bacon, salt, and pepper to the bowl. Mash until all ingredients are combined and creamy.
  5. Transfer the mixture back into the potato skins or into a large baking dish.
  6. Top with additional cheese for a bubbly finish and bake for 20-25 minutes until heated through and the cheese is melted.
  7. Garnish with freshly chopped green onions before serving.
