- 4 large baking potatoes
- 1 cup sour cream
- 1/2 cup milk
- 4 tablespoons butter
- 1 cup shredded cheddar cheese
- 1/2 cup cooked and crumbled turkey bacon
- Salt and pepper to taste
- Green onions for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Bake the potatoes for about 45 minutes or until they are tender to the touch.
- Let the potatoes cool slightly, then scoop out the insides and place them in a mixing bowl.
- Add the sour cream, milk, butter, cheese, turkey bacon, salt, and pepper to the bowl. Mash until all ingredients are combined and creamy.
- Transfer the mixture back into the potato skins or into a large baking dish.
- Top with additional cheese for a bubbly finish and bake for 20-25 minutes until heated through and the cheese is melted.
- Garnish with freshly chopped green onions before serving.
