Description

A cozy, easy weeknight dinner featuring tender asparagus, creamy white beans, and a bright lemon twist.


Ingredients

  • 8 oz pasta of choice
  • 1 can (15 oz) white beans, rinsed and drained
  • 2 cups asparagus, trimmed and cut into pieces
  • 2 tablespoons olive oil
  • 1 lemon (juice and zest)
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the pasta according to package instructions, then drain and set aside.
  2. Heat olive oil in a large pan over medium heat. Add minced garlic and sauté until fragrant.
  3. Add the asparagus and cook for about 3-4 minutes until tender.
  4. Stir in the white beans, lemon juice, and lemon zest. Cook for an additional 2 minutes.
  5. Toss the cooked pasta with the asparagus and bean mixture. Season with salt and pepper to taste.
  6. Serve warm, garnished with fresh parsley if desired.

Notes

This dish can be made ahead and stored for up to 3 days. Add spinach for extra greens, or top with toasted nuts for a crunch!
